Pink salmon with mushrooms in the oven

The most tender, very juicy pink salmon with mushrooms, baked according to an old recipe in the oven, will conquer many. You can safely serve it as an independent dish. It turns out light and satisfying. We recommend preparing it and enjoying the incredible taste.

Ingredients:

  • pink salmon fish - 2 kg;
  • mushrooms (champignons) - 250 g;
  • medium-sized onion - 2 pcs.;
  • mayonnaise - 1 tbsp. l.;
  • sour cream - 1 tbsp. l.;
  • nutmeg - to your taste;
  • vegetable (any) oil - 4 tbsp. l.;
  • butter or spread - 150 g;
  • hard cheese (any type) - 150 g;
  • medium lemon - 1 pc.

Step by step recipe:

  1. Take a whole 2 kilogram pink salmon fish. Gut it. Trim fins. Don't cut off the head. Carefully cut out the backbone and remove the ribs without damaging the integrity of the fish as much as possible. It is not difficult. Cut the meat on the sides, cut at the tail and near the head, the spine, which can be easily removed.
  2. Cut the mushrooms into 4 parts and chop the onion into cubes. Melt the butter in a frying pan and fry the mushrooms and onions until the onions are golden brown.
  3. While frying is taking place, grate the hard cheese onto a coarse grater and blend the lemon in a blender. These ingredients are necessary to prepare the stuffing filling.
  4. Season the mushrooms with onions with black and red ground pepper. Add just a little nutmeg (a pinch). When the onion turns golden, remove the pan from the heat, let cool and add grated cheese and half a twisted lemon to the warm mixture. The cheese should melt a little and make the filling gooey. The result was a semi-solid filling for stuffing pink salmon.
  5. Stuff pink salmon. Chop the belly with wooden skewers. If this fails, you can simply sew it with regular thread. Turn on the oven. Heat it to 180 degrees.
  6. Prepare the sauce. Pour into a bowl 1 heaped tablespoon of sour cream, the same amount of mayonnaise and the remaining half of ground lemon.
  7. Place the stuffed pink salmon on a baking tray, lightly sprinkled with vegetable oil. Brush one side of the fish with the prepared sauce and bake for 15 minutes.
  8. Take out the baking sheet, turn the fish over, brush the other side with the remaining sauce and put it back in the oven for 15 minutes. Stuffed pink salmon is ready to eat. Slice and serve only chilled.
